Weekend Project: Recipes- HootyCreeks, Cookies, Pancakes

Whoops, a bit late on my Friday blog post! Last minute on Friday we took a big 2 hour drive out into the PA countryside to look at horses and carriages with my parents. We had homemade pretzels on the drive back that were so tasty! So in keeping with food here are some fun recipes!



Sunday morning: the husband is making these Pancakes for my sister, parents and myself (with the addition of blueberries).

A friend recently sent us a package with HootyCreek cookies! And we made a batch of those this week.

AND an awesome cookie recipe from my sister-in-law (I made these on Friday and they are GONE):



Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt (optional)
  • 1 ¼ cups packed light brown sugar
  • 1 cup butter, softened
  • ½ cup granulated sugar
  • 2 eggs
  • 2 tablespoons milk
  • 2 teaspoons vanilla extract
  • 2 ½ cups quick or old-fashioned oats
  • 2 cups semi-sweet chocolate morsels
  • 1 cup coarsely chopped nuts (optional)

Instructions

  1. Combine flour, baking soda and salt in small bowl.
  2. Beat brown sugar, butter and granulated sugar in large mixer bowl until creamy.
  3. Beat in eggs, milk and vanilla.
  4. Gradually beat in flour mixture.
  5. Stir in oats, morsels and nuts.
  6. Drop by rounded tablespoon onto ungreased baking sheets.
  7. Bake in preheated 375 degree oven for 9 to 10 minutes for chewy cookiesor 12 to 13 minutes for crispycookies.
  8. Let stand for 1 minute; remove to wire rack to cool completely.
  9. Makes about 4 dozen cookies.



With all the cookie baking around here, the husband and I started quoting this cookie digital short from SNL- "take me to cookie court" a Fred Armisen classic.
